Oh Breakfast Cookie.
You are delicious. I made mine with 1/2 cup oats (140), half a scoop of chocolate protein powder (60), a tsp of cinnamon, a tsp of almond butter (50), and about 1/4 of vanilla almond milk (10). (The oats had goji berries and dried blueberries already mixed in) Popped it in the fridge last night, and as soon as I woke up this morning, flipped it over and left it in the freezer for 20min before drizzling honey (30) all over it.
It tastes really just like a delicious oatmeal cookie, and at 290 calories is so filling and leaves you feeling like you just had a dessert for breakfast!
For my morning fruit I had twice the amount of berries as shown in that picture. Blueberries are so good for you but relatively high in calories, 80 cal per cup and I can easily eat 3 cups of blueberries in one sitting. My philosophy is that berry season in almost over, and I have about a 6 month period of apples, pears, oranges, and bananas to look forward to so as long as they are still in season (the same principle applies to mangos, cherries, etc etc) I will eat them happily!
Last night I learned a valuable lesson - going to bed with a rumbling tummy makes it EXTREMELY hard to sleep, I ended up eating half a chocolate-coconut kashi bar in bed. The other half I'll save for a snack today. Should I count those as yesterday's calories or today's? :)
Today I have a school meeting at 11:00 and will have to leave for work a bit before 4:00. It throws off my lunch/dinner schedule a bit - I figure I'll have a snack during my meeting and eat a big meal at 3. I'll let my hunger dictate! :)
