Happy Couples

When I got to school today, I couldn't wait to eat my lunch! I forgot to bring a spoon with me and couldn't bring myself to pay $0.25 for a plastic spoon at the cafe in my faculty so I got a little crafty and managed to locate one, free of charge! (Details cannot be disclosed here)

My pumpkin yogurt ended up looking like this ... I guess the journey to school mixed the pumpkin and yogurt together and they combined into a liquidy yet creamy pairing. It tasted exactly like cold yet rich pumpkin soup! Alone it wasn't very appetizing, but when I dumped in the granola, the contrast of slight bitterness from the pumpkin and the sweetness of the granola made it such a satisfying and delicious combo! Definitely a match I will try again.

An afternoon snack featured a Caramel Nut Brownie Luna Bar, so decadent and delicious. I think I enjoyed eating it a little too much because the fella sitting beside me in international business class gave me a funny look. He clearly doesn't understand.

I picked up some hummus last night and wanted to incorporate it into tonight's dinner. I decided to try a combo that I had see on the interwebs that looked yummy - a cheese and hummus wrap. I paired it with a small (for me) salad.

The salad today features a base of lettuce, red bell pepper, carrot, strawberries, and honey goat cheese. I dressed the veggies with a tsp of ACV. The tang of the vinegar paired with the sweetness of the goat cheese is a knockout for your palette. Light and refreshing.

I spread hummus on a Ezekiel tortilla wrap and layered two slices of swiss cheese on top. Baked it in the toaster oven for 5 minutes and took it out when the cheese was nice and melted. This was so good. Comfort food at its finest! Today was a day of unlikely but delicious pairings and this one definitely takes the cake. Thank goodness International Business boy didn't see me eat this one.

Don't believe me? Look at this gooey delicious bite. The creamy cheese melting onto the gooey hummus surrounded by a slightly toasted shell of sprouted grain tortilla. It's love.

After dinner I had a couple of these guys. And maybe a teaspoon of chocolate peanut butter straight from the jar.

Now I'm off for a walk before the sun sets! Tomorrow is a work day so I won't be able to post until after work, but I've got a really exciting lunch planned ... stay tuned!
